Grady’s Devil’d Eggs
Ingredients:
3/4 cup mayonnaise (add more or less to taste...) I love Helman's but I have used Miracle Whip in a pinch, but it adds a flavor some people either love or hate... I kinda like it but it's probably a memory thing as my family would use that.
Dollop of sour cream 2 teaspoon white vinegar (more can be fun...)
1 teaspoon Chinese style dry mustard - not the boring old stuff =p 1/2 to 1 teaspoon Curry Powder - some powders are stronger in flavor... you can always add more later to bring it up a bit...
Dash of Cayenne pepper
Several good shakes of Dill Weed!
2 teaspoons Uncle Dan's dry ranch seasoning (or Hidden Valley)
1/8 teaspoon salt... the ranch has some salt in it, so go easy!
1 Tablespoon ground black pepper ( I like more than necessary)
Smoked Spanish paprika, or more dried Dill Weed and bacon for garnish..

Mash the yolks a bit (you can use a hand mixer if you'd like a nice smooth filling)! Add Mayo and Sour Cream, then all the spices. Mix away!
I taste as I go and add a little more of this, a little more of that, if I think it's lacking... the sour cream helps smooth it out without getting overly mayo-y!
You can spoon them into the eggs, or get fancy and use a pastry gun with that star-tip... than garnish with paprika/dill/bacon bits or even a sprig of fresh dill or chives! Cheers!!!!!!!
