Thai inspired beef kabobs

INGREDIENTS:

2 lbs Top Sirloin Beef, sliced thin across the grain, about 1/8" thick

2 Tbsp Onion, minced

4 cloves Garlic, minced

1 Tbsp fresh ginger, grated (powdered works, too)

1 Tsp Honey or 1/4 Cup Light Brown Sugar

1/4 Cup Fish Sauce

2 Tbsp Soy Sauce

2 Tbsp Sesame Oil (Olive / Avocado Oil works, too)

2 Tbsp Coriander, ground

1 Tbsp Cumin

1 Tsp Turmeric

1/8 Tsp Cayenne Pepper (or to taste)

1 Tbsp Lemongrass (or Lemon/Lime Zest or juice Red peppers & fresh cilantro for garnish (optional)

Thai peanut dipping sauce. (So many wonderful store-bought options)

Directions:

In a food processor or blender puree all the ingredients!

Place the steak slices into a gallon-size plastic bag or in a shallow dish and pour the marinade over the top of the meat. Refrigerate for at least an hour or up to a day. Thread the meat slices back and forth onto skewers. Don't over the bunch.

Preheat the grill to medium-high. Grill the skewers for 2-3 minutes per side (longer, if needed, depending on the thickness of the meat).

Garnish the satay with red peppers and cilantro, if desired, and serve with peanut dipping sauce.
