Brad’s Baked Brie

 
 

Ingredients:

2 - 4" wheels of Brie

1/4 cup Apricot Jam

1/4 cup Fig Jam

1/2 cup crushed pecans or walnuts

1/2 cup of Diced Ham

1/4 cup Dijon Mustard

1 package pre-made Pastry Dough

3 eggs, scrambled

 
 

Directions:

Pre-heat oven to 400° Turn cheese onto it's side. Slice along the mid-point just enough to cut through the "skin" along the entire equator. Take a length of kitchen string or unflavored dental floss and use that to slice the Brie wheel in half using the score line you created with the knife.

Open the wheel and spread the Fig jam on one half, then spread the apricot jam along the opposite side. Sprinkle the nuts over the 2 jams. Place the other side of the wheel back on top like you are making a sandwich... Do the same for the other Brie wheel, but on this one, spread the Dijon and ham.

Now lay out your first sheet of dough. Place the rejoined Brie wheel on the dough, then cut around the dough leaving about a 1/2" of dough around the bottom. Place another sheet of dough on top, and cut the excess leaving the same amount of overlap, so you can pinch the top sheet to the bottom , sealing the Brie wheel in dough.

For fun, take the left over dough, and use a cookie cutter, or you on awesome skills to make grapes or leaves to place onto the dough to make it look fun! Any additional leftover dough, sprinkle sugar and chocolate chips on top, coat with the egg wash and now you have a fun dessert!

Then use a brush to coat the dough wheels with the scrambled egg wash.

Transfer to a foil covered baking sheet, and bake for 25 to 30 minutes.

Put your amazing Brie wheels onto a fun serving plate, cut across the middle to open it up, add crackers, fruit, cheese and salami and you'll be the best host ever... heck it's fun enough to do just for yourself!
