asparagus burgers
Makes 6 burgers
INGREDIENTS:
1 bunch medium sized asparagus - blanched and diced fine.
3 porcini mushrooms - diced fine
1/2 cup Panko crumbs (herb or plain... herbs are best)
1 1/2 oz grated parmesan cheese
2 eggs
1/2 Tsp salt & pepper
Oil for the frying pan
1-2 Tbsp buns SAUCE: Mix together...
3/4 cup plain Greek yogurt
3 cloves of garlic
1/2 lemon plus zest
2 Tsp dried dill
1 Tsp salt & pepper
1/2 cup chives, diced

Blanch the asparagus for 3 to 4 minutes in salted boiling water. Sauté chopped mushrooms in a little butter, garlic and salt as you blanch.
After Asparagus cools, dice.
Mix Asparagus, mushrooms, eggs, cheese and spices until well mixed... let sit for 10 minutes to let the flavors come together while you heat the pan with the oil.
In a small bowl, scoop a portion of the mixture and flatten it into a patty. Fry patty in hot oil for at least 3-4 minutes per side, using your spatula to keep pushing the patty together until it is seared together, flip to cook the other side, and serve on buns with all the fixin's and the sauce.
Serve with a crisp Sauvignon Blanc... Like my French inspired '19... amazing!
